Quick and Easy Summer Brunch Menu
This summer brunch menu is easy, as summer cooking should be (at least in my book!). It requires very little cooking, and the most time consuming item (waffles) can be made in advance of the day. While it’s light on effort, I think it’s a crowd-pleasing creative brunch menu, if I don’t say so myself!

- Roasted Brussels sprouts
- Berry fruit salad
- Maple syrup & honey
Here’s how I simplified this brunch menu so we were not scrambling at the last minute.
First, the waffles were made ahead of time and reheated. They even freeze beautifully, so you could really prep in advance if you want to.
We use a Cuisinart Belgian waffle maker and an old family waffle recipe from my husband’s side. (We honestly don’t know where it originally came from, so I’m publishing it below. But if you happen to know, please do tell! Happy to give credit where credit is due!)
Second, we bought the chicken tenders pre-made from a restaurant. This saved us SO much time not having to fry chicken in our own kitchen. (Not to mention cleaning up the oil mess!) We simply reheated the chicken in the oven right before serving brunch.
Third, the vegetable – Brussels sprouts – were a quick prep choice with minimal seasoning. They were made the day of – but are seriously simple to make. They take less than 10 minutes to prep and then are in the oven the rest of the time. The recipe is at the bottom of this post.
Lastly, we chose low-maintenance, easy-to-cut fruit for a salad – seasonal berries. I used my mom’s trick of squeezing lemon juice over the berries as a natural preservative and extra layer of flavor.
All in all, with some planning ahead purchasing chicken and making waffles, time spent in the kitchen the day of the brunch party was under 30 minutes! Not bad!
Summer Brunch Decor
Sunny yellow seemed like a natural choice for summer brunch decorations, starting with a yellow and white check table runner as the base. The table runner is from Amazon, and is a great bargain. There are also matching napkins if you prefer a complete set.
Building out from there, our brunch table included woven placemat chargers, white plates, yellow cloth napkins tied in knots, floral painted glasses, wild blower bouquet, and a festive framed printable (keep reading for more details on how to get this for free!).
Now for how to display this summer brunch menu!
Chicken, waffles, and Brussels sprouts were served on a large wooden board. This thing is around 30″ long and one of my most used boards because the size makes it so versatile.
To add some height, chicken was placed on a small glass cake stand. Then, honey was served with the cutest little wooden drizzle in a small bowl, while maple syrup was served in an old crystal creamer pitcher that was passed down to me from family.
Lastly, berries greeted each guest at their place setting. The glass bowls are actually meant for ice cream – but honestly they’re the perfect size for small side dishes like fruit salad.

Equipment
- waffle maker
Ingredients
- 2 cups flour
- 3 tsp baking powder
- 1/8 tsp salt
- 2 eggs
- 1-1/2 cups milk
- 5 Tbsp butter
Instructions
- Mix all ingredients well
- Bake in waffle iron using non-stick spray
- Serve
Easy Roasted Brussels Sprouts Recipe
Roasted Brussels Sprouts
Ingredients
- Brussels sprouts
- Olive oil
- Salt
- Pepper
- Montreal steak seasoning
Instructions
- Preheat oven to 375 degrees
- Cut Brussels sprouts in half and place in bowl
- Toss with olive oil until lightly coated
- Add salt and pepper to taste, and toss again
- Spread evenly on baking sheet
- Sprinkle with Montreal seasoning (or your favorite steak seasoning)
- Bake for 45 minutes or until edges start to turn brown
