While I definitely would not claim to have made an authentic Irish meal, I took inspiration from what I understand are traditional cuisine elements and made it my own.
I’m also admittedly not a great cook. More often than not, I prefer to assemble and style pre-made dishes than cook from scratch. Given that, everything on this Irish breakfast board is EASY to make. If I can make everything on this board, then so can you!

St. Patrick’s Day Breakfast Menu Ideas
The feature menu item on this St. Patrick’s Day breakfast board are shamrock eggs – which are just eggs in green pepper rings, made using this recipe. They make a cute, colorful shamrock shape that I do believe makes the board egg-stra special (insert eyeroll from my teenaged daughter). š
I will say that I opted to make my eggs sunny side up instead of poached as the recipe calls for. But I also tried making the poached version and they were equally as delicious!
For side dishes, I included beans, roasted tomatoes, sausage, and hash browns.
To roast the tomatoes, I used vine ripened tomatoes tomatoes cut in half. To prep, I simply cut in half, sprinkled with olive oil, salt, pepper. Then I baked them on a parchment-lined baking sheet at 425 degrees for 20 minutes. They were SO yummy. With all of the other heavier items on this brunch board, they were a nice light and refreshing addition.
What Irish meal would be complete without bangers? Well, unfortunately I could not track down bangers and used sausage links instead. But I think it worked ok!? Served over hash browns, it’s a different spin on bangers and mash!
To satisfy our sweet tooth, I added a basket of sliced soda bread and blueberry scones with a side of strawberry preserves. This rattan basket is a recent purchase – I love the slightly pedestal shape.
Last but not least, I served Irish tea as a hot beverage option. Normally I’m a coffee drinker, but I do like a cuppa every now and then!

I tried really hard to track down authentic ingredients. Since I live in a smaller market, they weren’t quite available yet. So I had to improvise with substitutes.

Brunch Board Serveware & Decor
If you’re like me, you like to know where things in pictures come from. Don’t you just hate when you see something in a photo that you love, but you don’t know how to track it down!?
Well, I’ll do my best here to not let you down!
The serveware and decorations I used for this St. Patrick’s Day brunch board are mostly from Target and Crate & Barrel and many still available.
The wood board I used is an old favorite that is unfortunately no longer available. But this one is similar.
For the rest of the items on the board, the cheese knives and oval bowl are pieces I use regularly. Definitely good to have on hand if you’re on the market for some classic, evergreen sets.
For the strawberry preserves, I used a repurposed yogurt container. (I also blogged about how to use these for tea lights here.) The wood spreader I think is from a trip to Vermont years ago? But I found a similar one here.
For my little tea set up, I used this marble stand, cups and saucers from my everyday dishes, and a coffee carafe I bought in Germany forever ago, but linked a another option here that I’ve had my eye on. (In fact, it’s in my cart!)
The “Top ‘O the Mornin’ To Ya” sign is a downloadable I offered in this post. The frame is the RIBBA from Ikea. The price point and quality of these frames is amazing. You need these if you don’t already own them!
The white vases – shorter one and taller one – are from Target. I LOVE these and might have others from the collection in few other sizes and shapes as well. š
My local grocery store had shamrock plants in stock, and the dried florals are from Crate & Barrel. The green bamboo lattice print tablecloth is from TJ Maxx – but here is another option I have my eye on.
